R&D leads to major Marks & Spencer deal for Fermoy business

Dairy snack company Dairy Concepts wins multi-million contract to supply over 580 M&S stores across UK and Ireland.

The development of a new high-protein, gluten-free dairy snack range in collaboration with Marks & Spencer has landed a contract for  Fermoy business Dairy Concepts to supply the product to hundreds of stores.

Dairy Concepts, headquartered at the world-renowned Moorepark dairy research and development campus in Fermoy, will sell the product under the brand name M&S Cheese Clouds in 580 M&S stores.

The collaboration with M&S has resulted in a significant increase in production volume for Dairy Concepts at its Fermoy manufacturing facility. This growth has necessitated the hiring of five additional production staff, bringing the total number of Dairy Concepts employees to 24, further bolstering local employment and economic development in the Munster region.

Leveraging R&D expertise

M&S Cheese Clouds are a high protein snack – 8g protein per 20g pack – developed as a healthy crunchy alternative to traditional snacks like crisps and nuts.

Leveraging its dairy product research and development expertise, and state-of-the-art technology at its 10,000 sq. manufacturing facility in Fermoy, Dairy Concepts crafts these snacks by combining premium Irish Cheddar with a unique vacuum-cooking process.

Importantly, these snacks have been developed in such a way as to not require refrigeration or special storage conditions and can be conveniently stored at room temperature, remaining fresh for an extended period.

This characteristic ensures an extended shelf life and reduced storage requirements for retailers, facilitating seamless exports and appealing to a broader customer base seeking convenient, shelf-stable snack options.

Dairy Concepts and M&S are planning further expansion in the partnership with plans for new product development, including a new flavour variant and larger pack sizes scheduled for launch in early 2025, positioning the Fermoy company as a key player in the dairy snacks market.
